This is one of my best ever gluten free cakes, it’s so moist and light and still chocolatey-good. You can top this cake however you choose – a caramel glaze, dust it with icing sugar, make a chocolate Ganache topping… do some experimenting!

Ingredients

  1. Pre-heat oven to 350F.
  2. In a mug, mix together the cocoa powder and boiling water until you get a smooth, creamy consistency. Set aside.
  3. In a medium size bowl, sift together the flour and baking powder.
  4. In a second bowl whisk the eggs and then add the vanilla and cocoa mixture. Mix.
  5. In a separate large bowl, use an electric mixer to whip together the butter, sugar and ricotta cheese. You should get a nice and fluffy mixture.
  6. To the large bowl start adding the flour and cocoa/egg mixture in about three separate batches. Mix until all ingredients are combined, but do not over mix.
  7. Pour the cake batter into a large baking pan, or several small pans, and bake for about 25 minutes for a small pan or 45 minutes for a big one. Once a toothpick is inserted and comes out dry it is done.
  8. When done, remove from the oven and allow it cool.
  9. Decorate as you prefer.
