Chocolate Cake with Drunken Champagne Grapes

I’ve had a recipe from “Dinner” by Marie Claire that I’ve wanted to make for so long but I wasn’t able to find champagne grapes. Last week when I was in Costco I saw champagne grapes and knew that I had my chance! However it took me another week to make it because I couldn’t decide if I should prepare it as the original or as a gluten free adaptation. The batter for this cake looked absolutely delicious – just like fluffy chocolate mousse. Best of all, once baked nobody knew it was gluten free.

Ingredients
For the cake
  • ½ cup gluten free flour (I used Arnel’s all purpose GF flour mix)
  • 1 cup Rodelle Dutch Dark Cocoa (available at Costco, it’s excellent cocoa)
  • ¾ cup plain yoghurt
  • ⅓ cup sugar
  • ½ cup Kirkland pure maple syrup
  • 1 teaspoon Kirkland pure vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 eggs
  • ½ cup water (depending on your type of GF flour you may need more water. You should be able to pour your batter, not have to scoop it)
For the chocolate sauce
  • 1 cup heavy cream
  • 1 cup Kirkland semi sweet chocolate chips
For the drunken champagne grapes
  • 1 cup sweet wine
  • 1½ cups champagne grapes (occasionally available at Costco)

Instructions
Prepare the grapes
  1. In a sauce pan, add the grapes and sweet wine. Bring to a boil and simmer for 3-4 minutes.
  2. Turn off the heat and allow them to sit for a few hours.
Prepare the cake
  1. Preheat oven to 350F
  2. In a large bowl mix all the wet ingredients together.
  3. In a separate bowl, mix all the dry ingredients together.
  4. To the bowl with the wet ingredients, mix and slowly add the dry ingredients. Mix until smooth.
  5. In an 8 inch spring form pan lined with parchment paper, pour in the batter.
  6. Bake for approximately 40 minutes or until a toothpick inserted comes out dry.
  7. When the cake is finished, let it rest for 10 minutes without opening the spring form pan.
  8. Remove the ring from the pan and allow to further cool. Prepare the chocolate sauce.
Prepare the chocolate sauce
  1. In a small sauce pan, warm the heavy cream and then add the chocolate chips until they melt and mix in with the cream. Stir occasionally.
  2. When the sauce is ready, cut the cake into pieces and place on a plate.
  3. Drizzle or pour the sauce onto the cake, add some grapes and optionally serve with a dollop of whipped cream.
