Cayenne Honeydew Melon Soup

Sometimes when you try something new and very different you may not be sure what you’re going to get.  And sometimes it really makes you say WOW IS THAT GOOD! This cayenne and honeydew melon soup was made by my brother and it quite simply is delicious, completely unique and so simple to prepare.  If you only try one recipe on my blog make it this one. I’ll be shocked if you don’t like it!

Ingredients
  • 1 ripe honeydew melon, peeled, seeded and cut into cubes
  • ½ liter vegetable broth
  • 1-2 fresh limes
  • cayenne pepper to taste
  • Kirkland Himalayan Pink salt to taste(only required if your broth is low in salt / salt free)
  • optional: fresh mint to garnish

Instructions
  1. In a pot bring the vegetable broth to a boil.
  2. Add the melon cubes into the broth, reduce heat and simmer for 15-20 minutes.
  3. Allow the soup to cool a bit and then transfer it to a blender and blend until smooth.
  4. Return the soup to the pot, add1 tablespoon of lime juice and mix in.
  5. Taste and add more fresh lime juice if required.
  6. Ladle the soup into bowls and top with cayenne pepper according to your tastes.
  7. Serve with toasted crusty bread, and optionally garnish with fresh mint.
