Carnival squash are known for their beautiful orange and green hued colors, and their flavor is rich, buttery and sweet. I had one at its peak of ripeness and my plan was to roast and then stuff it, the only question was, with what? I wanted it to be vegetarian so I began with some quinoa and then just went with what felt right. The stuffing features the flavors of apricot, honey, lemon, some pistachios for crunch and one of our favorite spices, ras el hanout. It’s delicious and very healthy. Note that I’ve found that some quinoa are bitter if not first rinsed before you cook them.  You can also make this dish vegan by substituting agave syrup for the honey.

Ingredients

Instructions
  1. Pre-heat oven to 425F.
  2. Lightly coat the inside halves of the squash with canola oil, lightly grind fresh salt on to them and then roast in the oven for approximately 40 minutes (depending on size) or until the squash is tender and cooked.
  3. While the squash is roasting, in a pot add the vegetable broth, saffron, quinoa and bring to a boil.
  4. Reduce heat to a simmer and cook for 15 minutes or until the quinoa is cooked. Once the quinoa is cooked if you still have liquid in it, drain it.
  5. While the quinoa is cooking, in a large fry pan over medium heat, warm the oil and then fry the onion for about 3-4 minutes.
  6. Add the chopped Anaheim pepper, ginger and ras el hanout and fry for a further 3 minutes.
  7. Add the honey, chickpeas, dried apricot, half of the pistachios and lemon zest into the quinoa. Season to taste with salt and pepper.
  8. Add the quinoa mixture into the fried onion mixture and mix.
  9. Stuff the squash with the golden quinoa and place in the oven for another 10 minutes.
  10. Serve the squash sprinkled with the remaining pistachios and fresh chopped cilantro.
  11. Optionally serve topped with plain yogurt.
