Caramelized onion mini tarts

This yummy, rich appetizer can be prepared several different ways – on crackers, with puff pastry cups, mini pie crust cups or with phyllo pastry.  It can even be served on its own as a chutney-like topping.  The cheese can also be either goat cheese, brie, camembert or even feta. Here I have prepared it in puff pastry cups and topped it with Costco Kirkland goat cheese.

  • 1 onion, sliced
  • 2 tablespoons raisins
  • 1 clove of garlic, chopped
  • 3 teaspoons sugar
  • 3 tablespoons Kirkland balsamic vinegar
  • 2 tablespoons Kirkland extra virgin olive oil
  • puff pastry
  • ⅓ cup crumbled Kirkland goat cheese

  1. Prepare the puff pastry. (I use frozen as it works well. There are also fresh versions, simply follow the instructions from the manufacturer.)
  2. In a skillet heat the olive oil, add the onions and garlic and fry over medium-low heat about 20 minutes until onion is soft and lightly browned.
  3. Next add the sugar and vinegar and simmer for about 10-15 minutes.
  4. As a last step add the raisins and mix well.
  5. Into each puff pastry cup, place a spoonful of the onion filling and then sprinkle with your cheese choice.
