Caramelized onion buns

These are delicious buns, one of my favorites of the white bun variety.  So soft and with the infused flavor of caramelized onion they make a perfect pair for sandwiches or burgers.  This recipe is adapted from my favorite Polish baking blog, Mojewypieki.com.

Ingredients
  • ½ cup of warm milk
  • 1 tablespoon sugar
  • 2 teaspoons Kirkland salt
  • 2 teaspoons Kirkland extra virgin olive oil
  • 3 tablespoons soft or melted butter
  • 1.5 cups warm water
  • 1 tablespoon of dry yeast
  • ¾ cup onion, chopped
  • 5½ cups of flour
  • 1 egg beaten with 1 tablespoon milk for brushing

Instructions
  1. In a saucepan over medium, fry the onion in the olive oil until nicely caramelized.
  2. Knead the dough, either with a bread machine or by hand
Manual method
  1. In a large bowl mix the milk, water, sugar, salt and butter.
  2. In another large bowl, mix the yeast with the flour and then add liquid and onions.
  3. Knead the dough until elastic and smooth, similar to pizza dough. As you knead add extra flour if it is necessary.
  4. Leave to sit in a warm place until it has doubled in volume… how long will depend on the temperature in your kitchen.
Using a bread machine
  1. Put all the ingredients for the dough into the bread machine in the following order: liquids, dry ingredients including caramelized onion, then yeast.
  2. Choose a “dough” program
Bake the buns
  1. Preheat the oven to 400F
  2. When the dough is ready, knead and divide into about 26 – 28 parts.
  3. Shape into balls and put on a baking pan which has been floured on lined parchment paper. Cover with kitchen towel and let rise for about 30 minutes.
  4. Just before putting buns it to the oven cut a cross on the each one and then brush the top with the beaten egg and milk mixture.
  5. Bake for about 20 minutes at 400 F or until golden.
