Costco is really starting to jump on the organic food bandwagon, the number of organic product offerings has increased significantly over the last 6-12 months. They are even offering Kirkland branded organic products and I think all of this is great!  One of the latest organic offerings is Explore Asian Organic Black Bean Spaghetti. It’s gluten free, vegan, kosher and has lots of fiber. Even though it is labelled as a spaghetti, to me it is more Asian oriented so I decided to make it with a unique smoked tofu and pistachio stir fry. The black bean spaghetti is quite good tasting even on its own, give it a try!

Ingredients
  • 2 tablespoons ginger, chopped finely
  • 1 tablespoon garlic, chopped finely
  • ½ medium onion, cut into wedges
  • 1 cup mushrooms, sliced
  • 1½ cups bell pepper, sliced
  • 1 cup green beans, cut into small pieces
  • 1 cup smoked tofu, cut into cubes
  • 2 tablespoons sesame oil
  • 1 tablespoon Kirkland maple syrup
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • 2 tablespoons sweet chili sauce
  • ½ teaspoon chili flakes
  • 1 teaspoon corn starch
  • 3 tablespoons crushed pistachio
  • 100 grams Explore Asian Organic Black Bean Spaghetti
  • optional: fresh basil

Instructions
  1. Bring a large pot of water to a boil.
  2. In a large saute pan over medium heat warm the sesame oil and then fry the tofu for 4-5 minutes, stirring frequently.
  3. Add chili flakes, garlic, onion and ginger and fry for 2 minutes.
  4. Add the mushrooms, bell pepper, beans and fry for 5 minutes.
  5. While the vegetables are frying, add the black bean spaghetti to the pot of water and boil for 6 minutes.
  6. In a cup, mix together the maple syrup with the soy, oyster and chili sauces.
  7. Pour the sauces into the fry pan and mix.
  8. In the cup add ⅓ cup of cold water, mix in the cornstarch, mix until dissolved.
  9. Add the cornstarch mixture into the pan, mix and cook for about 1 minute, stirring.
  10. If the sauce becomes too thick, add a little bit of additional water.
  11. Serve the stir-fry over the noodles and garnish with pistachio and optionally with basil.
