These small black lentils are also called beluga lentils because when cooked they look similar to black caviar.  They are very high in fiber and protein and are an excellent choice for people who are watching their calories. We’ll take care to ensure they are cooked less than regular lentils so as to have more of a crunchy/”pop” texture to them.

  • ½ cup black lentils
  • 2 tablespoons white/yellow onion, chopped
  • 2 tablespoons Italian parsley, chopped
  • 1 tablespoon green onion, chopped
  • 2 tablespoons fresh lemon juice
  • 1½ tablespoons Kirkland balsamic vinegar
  • Kirkland sea salt fresh ground Telicherry pepper
  • 2-3 tablespoons Kirkland soft goat cheese
  • 1½ teaspoons Kirkland extra virgin olive oil

  1. In a large frying pan over medium heat, warm the ½ teaspoon of olive oil, then add the white onion and saute for 2 minutes.
  2. In a small pot boil 2 cups of water and then add ¼ teaspoon of salt, the lentils and onion mix into the water.
  3. Cook the lentils for approximately 12 minutes or until the lentils are tender
  4. While the lentils are cooking, in a bowl mix together the green onion, parsley, balsamic vinegar, lemon juice, and salt and pepper. This is our dressing.
  5. Once done, drain the lentils and add them to the bowl with the dressing and mix.
  6. Serve with crumbled goat cheese.
