Beet, Orange & Walnut Salad – Vegan & Gluten Free

I found the inspiration for this salad while visiting our local natural food store. The staff were sampling an in-house made beet salad with oranges. I modified it to be vegan and gluten free, and added some walnuts for crunch. It’s low in calories and full of vitamins, and it tastes great too!

Ingredients
  • 2 apple sized beets
  • 1 orange, peeled and with the membranes removed
  • ¼ cup of roasted Kirkland walnuts
  • 1 tablespoon onion, chopped
  • 2 tablespoons Kirkland balsamic vinegar
  • 1 tablespoon Kirkland maple syrup
  • 1 tablespoon Dijon mustard
  • Kirkland sea salt and fresh ground Kirkland Tellicherry pepper to taste

Instructions
  1. Wash the beets and then place into a pot of water. Cover and cook until the they are soft and then remove the beets to cool.
  2. Peel and cut the beets into 1 cm cubes.
  3. Cut each segment of orange into half and then place them, the beets, onion and walnuts into a bowl.
  4. In a small bowl, use a fork and vigorously stir together the balsamic, maple syrup and mustard to make the dressing.
  5. Pour the dressing over the salad and season with salt and pepper.
