I love beets and I’m always looking to try something different with them. I’ve had some recent success with our spicy carrot fritters so I decided to try a beet based fritter.  It was just my husband and I so we had enough of these that they formed a light dinner for us, however they are intended as an appetizer for 4 or more people.  If you need to keep them warm as you’re cooking, warm your oven to 250F and as batches are made keep them on a plate in the oven. My husband and I were simply eating them as they came off the pan. :)

Ingredients
For the beet fritters
  • 3 apple sized beets, peeled and shredded thickly
  • 1 medium sized carrot, shredded
  • 2 small garlic cloves, crushed
  • ¼ teaspoon Kirkland Himalayan Pink salt
  • 2 large organic eggs (Organic eggs are available at Costco in 1.5 dozen for the same cost as 1 dozen in the supermarket)
  • 3 tablespoons gluten free flour (use regular flour if you prefer)
  • ¼ teaspoon fresh ground Kirkland Tellicherry
  • canola oil for frying
For the dipping sauce
  • ½ cup plain yoghurt
  • ½ garlic clove, crushed
  • fresh ground Kirkland Himalayan pink salt to taste
  • fresh ground Kirkland Tellicherry to taste
  • 1 teaspoon chopped fresh dill (I used 1 tablespoon because I also love dill)

Instructions
For the dipping sauce
  1. In a small bowl mix everything together for the sauce, set aside.
For the fritters
  1. In a large bowl slightly beat the eggs and then add all other ingredients and mix.
  2. If the mixture is too runny then add a bit more flour.
  3. Heat a large pan over medium high to high heat and then add approximately 2-3 teaspoons of canola oil.
  4. When the oil is hot, scoop ¼ to ⅓ of a cup of the mixture into the pan so as to form a fritter. Do 3-4 fritters per batch.
  5. Fry the fritter for approximately 3 minutes per side, or until nicely browned and crisp.
  6. Serve the fritters with the dipping sauce.
