Whenever I’m at the hair salon I stop by a cute little kitchen cookware store that is two doors down. This last time I saw a baking pan for mini doughnuts and simply had to get it to make doughnuts for our girls. Our one daughter loves bacon, the other loves maple syrup, so I combined those two ingredients together for these scrumptious little morsels. From this recipe you will make approximately 24 mini doughnuts, which sounds like a lot but by the end of the day they were all gone!

Ingredients
For the doughnuts
  • 1¼ cup flour
  • ½ cup sugar
  • 1½ teaspoons baking powder
  • ½ cup plain yoghurt (not Greek, you’ll need a thin yoghurt)
  • 1 egg
  • 1½ tablespoons butter, melted
  • 1 teaspoon Kirkland pure vanilla
For the glaze
  • 3 tablespoons Kirkland pure maple syrup
  • 2 tablespoons milk
  • ½ cup icing sugar
  • 2-3 slices bacon, chopped and then fried

Instructions
For the doughnuts
  1. Preheat the oven to 425F.
  2. In a bowl combine the dry ingredients.
  3. In another large bowl combine wet ingredients and egg.
  4. Mix the dry ingredients into the wet and stir. If the batter is too thick (hard to stir) add another 1-2 tablespoons milk.
  5. Spray the baking pan with cooking spray or wipe with canola oil.
  6. Place the batter into a zip lock bag and cut a 1 cm hole in the corner. Squeeze the batter out into mini doughnut molds. Only fill ½ to ⅔ of the way.
  7. Bake in the oven for 5-6 minutes just so that when you touch with your finger you can see that the doughnuts will easily come out of the pan.
  8. Remove from the oven and allow them to cool.
For the glaze
  1. Mix together the icing sugar, maple syrup and milk. Ideally it should have a thick but pourable consistency. If it is too thin add more icing sugar, too thick, add a bit more milk.
  2. When the doughnuts can be handled, dip one side in the glaze.
  3. Top with bacon bits.
