This is an easy and tasty vegetarian dish. Add in some TruRoots Ancient Grain pasta and you’ll never know that you’re eating a gluten free pasta. Topped with fresh Kirkland Parmesan and accompanied by a nice buttery Chardonnay, it’s a great Friday evening dinner.

  • 3 garlic cloves, chopped
  • ¼ cup red onion, chopped
  • 2 small radicchio, cored and thinly sliced
  • ½ tablespoon Kirkland balsamic vinegar
  • 3 tablespoons Kirkland extra virgin olive oil
  • 1 tablespoon fresh rosemary, chopped
  • ⅓ cup roasted Kirkland pine nuts
  • ½ cup Kirkland Parmesan cheese, grated
  • 2½ cups gluten free TruRoots Ancient Grain penne pasta (Available at Costco.. when they haven’t sold out!)
  • 2 cups of milk
  • Kirkland sea salt and freshly ground Kirkland Tellicherry pepper

  1. Soak the sliced radicchio in milk and cook your pasta according to the instructions.
  2. While the pasta is cooking and radicchio soaking, in a large deep pan over medium heat warm the olive oil and then fry the onion for 2 minutes.
  3. Add the garlic and continue to fry for another minute.
  4. Drain the radicchio and put it into the pan, add the rosemary and season with salt and pepper. Cook for a few minutes and then add the balsamic vinegar.
  5. Fry everything until the radicchio becomes soft.
  6. Mix the radicchio sauce with the pasta, sprinkle with the Parmesan cheese roasted pine nuts
